Canelones de tempeh y shitake // Tempeh & Shitake Cannelloni

♥ 1 caja de pasta de canelones
♥ 200g de tempeh
♥ 1 taza de setas shitake o mezcla de setas
♥ 2-3 cdas de alga wakame
♥ 1 zucchini o calabacin
♥ 1 cebolla
♥ salsa bechamel
♥ queso vegano rallado
♥ 1 cda de pipas de girasol
♥ 1 cda de aciete de oliva

Para la salsa bechamel:
♥ 4 cdas de aceite de oliva
♥ 60g de harina integral
♥ 600ml de leche de soja
♥ media cdta de nuez moscada
♥ sal
  1. Para preparar las láminas de canelones seguimos las instrucciones del envase.
  2. Rallamos el tempeh, picamos las setas, el alga (en nuestro caso venía disecada ya cortada), el calabacín y la cebolla.
  3. Preparamos la bechamel. Calentamos un poco el aceite en la sartén, añadimos la harina y removemos hasta que quede integrada. Incorporamos la leche poco a poco y vamos removiendo continuamente con una cuchara de madera o batidor manual hasta que quede una crema suave y sin grumos, añadimos la sal y la nuez moscada y dejamos la salsa a fuego unos 10-15 minutos removiendo de vez en cuando.
  4. Calentamos un poco de aceite en una sartén, sofreímos la cebolla y añadimos las demás verduras y el tempeh. Salteamos 5-7 minutos hasta que la verdura empiece a ponerse blanda.
  5. Cogemos las láminas de pasta y colocamos 2 cdas de relleno en el centro a lo largo. Enrollamos las láminas y las colocamos en una bandeja de horno.
  6. Cuando todos los canelones rellenos estén sobre la bandeja de horno vertemos la salsa bechamel encima y espolvoreamos queso rallado vegano.
  7. Horneamos los canelones a 180º en horno precalentado 10-15 minutos.
  8. Espolvoreamos con pipas de girasol (o levadura de cerveza) y servimos.

♥ 2-3 tbs of dried wakame seaweed
♥ 1 zucchini
♥ 1 onion
♥ bechamel sauce
♥ grated vegan cheese
♥ 1 tbsp of sunflower seeds
♥ 1 tbsp olive oil

For the bechamel sauce:
♥ 4 tbsp olive oil
♥ 60g whole wheat flour
♥ 600ml soy milk
♥ 1/2 tsp of nutmeg
♥ salt
  1. Follow the instructions on the packaging to prepare canelloni pasta.
  2. Grate the tempeh, chop the mushrooms, the seaweed, zucchini and onion.
  3. Prepare the béchamel sauce. Heat the oil in a pan, add the flour and stir until well mixed. Add the milk slowly stirring continuously with a wooden spoon or hand whisk until smooth, add salt and nutmeg and let it cook for about 10-15 minutes stirring occasionally.
  4. Heat some oil in a frying pan, stir the onion and add the other vegetables and the tempeh. Saute 5-7 minutes until the vegetables begin to soften.
  5. Take pasta sheets and place 2 tbsp of filling in the center along. Roll the sheets and place them on a baking sheet.
  6. Pour the béchamel sauce on top and sprinkle with grated vegan cheese.
  7. Bake the cannelloni at 180º in preheated oven for 10-15 minutes.
  8. Sprinkle with sunflower seeds (or nutritional yeast) and serve.
