Empanadillas de plátano macho rellenas de judías y arroz // Plantain Empanadillas with Kidney Beans & Rice Stuffing

 2 plátanos macho o plátanos verdes
 1 taza de arroz cocido
 1 taza de judías rojas cocidas
 1 zanahoria
 4 champiñones
 2 tomates secos
 4-5 tomates frescos
 2 cdas de cilantro picado
 2 dientes de ajo
 1 cebolla
 1 cda de tomate concentrado
 1 cdta de tomillo
 1 cdta de sal
 1 cda de aceite de oliva
 lonchas de queso Naure&Moi sabor mozzarella
  1. Ponemos en remojo 3/4 tazas de judías rojas o judías pintas una noche antes de la preparación. Cocemos las judías hasta que queden blandas, escurrimos y reservamos.
  2. Cocemos media taza de arroz hasta que quede blando siguiendo las instrucciones del envase. Reservamos.
  3. Cortamos el plátano macho en rodajas gruesas y lo dejamos hervir a fuego medio hasta que esté blando unos 10 minutos, pinchamos con el tenedor para comprobar su punto de cocción. Escurrimos y dejamos enfriar un poco. Pelamos las rodajas y las aplastamos con un tenedor formando una masa homogénea.
  4. Picamos la cebolla, los ajos, los champiñones, los tomates secos, el cilantro, rallamos la zanahoria y trituramos los tomates frescos.
  5. Calentamos un poco de aceite de oliva en una sartén, Sofreímos la cebolla y los ajos hasta que se doren. A continuación, añadimos la zanahoria y los champiñones, cocinamos un minuto y agregamos las judías cocidas, tomate seco y el cilantro picado. Cocinamos otros 2 minutos e incorporamos los tomates triturados, el tomate concentrado, tomillo y sal. Cocinamos otros 10 minutos a fuego medio-bajo.
  6. Hacemos las empanadillas. Colocamos un trozo de film transparente en la encimera. Separamos la masa de plátano en 4 partes iguales (de 2 plátanos salen 4 empanadillas). Hacemos una bolita con las manos, la colocamos sobre el film, tapamos con otro trozo de film transparente y la aplastamos con un plato formando un circulo. 
  7. En una mitad de cada círculo colocamos el relleno: un trozo de queso vegano, judías con verduras y arroz. Cerramos las empanadillas con la ayuda del film y sellamos los bordes. Un truco para que se sierren bien es sellarlos con un plato hondo apretando bien.
  8. Pincelamos las empanadillas con aceite y las cocinamos al horno 15 minutos a 180ºC. También se pueden pueden freír hasta que se doren.

♥ 2 plantains or green bananas
♥ 1 cup cooked rice
♥ 1 cup cooked red kidney beans
♥ 1 carrot
♥ 4 mushrooms
♥ 2 sun-dried tomatoes
♥ 4-5 fresh tomatoes
♥ 2 tbsp chopped cilantro
♥ 2 garlic cloves
♥ 1 onion
♥ 1 tbsp tomato concentrate
♥ 1 tsp of thyme
♥ 1 tsp of salt
♥ 1 tbsp of olive oil
♥ slices of cheese Naure & Moi mozzarella flavor
  1. Soak 3/4 cups of red beans or black beans a night before preparation. Cook the beans until they are soft, drain and set aside.
  2. Cook half a cup of rice until softened following the instructions on the packasge. Set aside.
  3. Cut the plantains into thick slices and let it boil over medium heat until soft for about 10 minutes (check with a toothpick or fork). Drain them and let cool a little. Peel the plantain slices and crush them with a fork forming a homogeneous mass.
  4. Chop the onion, garlic, mushrooms, sun-dried tomatoes, cilamtro, grate the carrot and blend fresh tomatoes.
  5. Heat some olive oil in a frying pan,stir the onion and garlic until golden. Then, add the carrot and the mushrooms, cook for a minute and add tcooked beans, sun-dried tomatoes and chopped cilantro. Cook for another 2 minutes and add the crushed tomatoes, the concentrated tomato, thyme and salt. Cook for another 10 minutes over medium-low heat.
  6. Make the empanadillas. Place a piece of transparent film on the counter. Separate the plantain dough into 4 equal parts (from 2 bananas come out 4 empanadillas). Make a ball with your hands, place it on the film, cover with another piece of transparent film and press it with a plate forming a circle.
  7. In each circle place the filling: a slice of vegan cheese, beans with vegetables and rice. Close the patties helping with the film and seal the edges. One trick to make them well is to seal them with a deep dish pressing well.
  8. Brush the patties with oil and cook in the oven for 15 minutes at 180ºC. They can also be fried until light brown colour.
