Sopa campesina alemana Bauernsuppe vegana con albóndigas de pan Semmelknödel // German Vegan Soup with Bread Dumplings

Las Semmelknödel son una especie de albóndigas elaboradas a base de pan y son una especialidad de la gastronomía del sur de Alemania, Austria y República Checa. Suelen servirse como acompañamiento de otros platos, por ejemplo, Bauernsuppe, sopa típica de Baviera, cuya versión vegana encontraréis más abajo. Es un plato contundente y reconfortante, perfecto para los días fríos de invierno.
Para las albóndigas de pan Semmelknödel:
♥ 1 barra de pan grande
♥ 1 cebolla
♥ 1/2 manojo de perejil
♥ 1 cdta de margarina vegetal
♥ 1 1/2 tasas de leche de soja
♥ 3 cdas de harina de garbanzos + 1 cdta de fécula de maíz + 1,5 cda de agua
♥ 1 cdta de sal kala namak
♥ 1/2 cdta de curcuma 
♥ una pizca de sal
♥ una pizca de pimienta
♥ 1 cdta de orégano
♥ 2 cdas de pan rallado
  1. Cortamos el pan en rebanadas finas, picamos la cebolla y el perejil.
  2. En un sartén derretimos la margarina, cuando esté caliente sofreímos la cebolla con el perejil.
  3. Colocamos las rebanadas de pan  en un bol grande, añadimos el sofrito y removemos.
  4. Calentamos la leche de soja y la incorporamos en el bol con el pan.
  5. Hacemos un "huevo" mezclando bien la harina de garbanzos con la fécula de maíz, cúrcuma, sal, sal kala namak, orégano, pimienta y agua hasta que tenga la textura líquida parecida a un huevo batido. Vertemos la mezcla en un bol y amasamos. Añadimos el pan rallado y seguimos amasando. la masa debe quedar pegajosa y muy espesa.
  6. Hacemos bolitas grandes con la manos y la cocinamos en agua hirviendo hasta que floten. 
Para la sopa campesina Bauernsuppe:
♥ 1 taza de bocaditos de soja texturizada o legumeat de Sanygran
♥ 1 litro o más de caldo vegetal
♥ 3 papas
♥ 1 zanahoria
♥ 2 cebollas picadas
♥ 2 dientes de ajo picados
♥ 1 cdta de pimentón ahumado
♥ 1 cda de harina de trigo
♥ 1 cdta de tomillo
♥ 1/2 manojo de perejil
♥ 1 cda de aceite vegetal o margarina
♥ pimienta 
♥ sal
  1. Ponemos en remojo los bocaditos de soja texturizada o legumeat en agua o caldo vegetal caliente hasta que se hidraten bien.
  2. Calentamos una olla con un poco de aceite o margarina. Añadimos los bocaditos de soja o legumeat, la cebolla picada, el ajo, el pimentón y la harina. Salteamos removiendo continuamente. 
  3. Cuando la cebolla se ponga transparente cubrimos la soja con el caldo vegetal o agua, salpimentamos.
  4. Llevamos el caldo a ebullición y añadimos las papas y la zanahoria troceadas, el tomillo y el perejil picado. Cocinamos a fuego medio hasta que la verdura quede blanda.
  5. Servimos la sopa con las albóndigas de pan Semmelknödel.

For bread dumplings Semmelknödel:
♥ 1 loaf of bread
♥ 1 onion
♥ 1/2 bunch of parsley
♥ 1 tsp vegetable margarine
♥ 1 1/2 cups of soy milk
♥ 3 tbsp of chickpea flour + 1 tsp cornstarch + 1.5 tbsp of water
♥ 1 tsp kala namak salt
♥ 1/2 tsp curcuma
♥ a pinch of salt
♥ a pinch of pepper
♥ 1 tsp of oregano
♥ 2 tbsp bread crumbs
  1. Cut the bread into thin slices, chop the onion and parsley.
  2. In a frying pan melt the margarine, when it is hot stir the onion with the parsley.
  3. Place the slices of bread in a large bowl, add the onion and parsley and mix.
  4. Heat the soy milk and pour it in the bowl with the bread slices.
  5. Prepare an "egg" by mixing chickpea flour with corn starch, turmeric, salt, kala namak salt, oregano, pepper and water until it has a liquid texture similar to a beaten egg. Pour the mixture into a bowl and knead. Add the breadcrumbs and continue kneading. The dough should be sticky and very thick.
  6. Make big balls with hands and cook them in boiling water until they float.

For the soup Bauernsuppe:
♥ 1 cup of textured soy prtein chunks (TVP)
♥ 1 liter or more of vegetable stock
♥ 3 potatoes
♥ 1 carrot
♥ 2 chopped onions
♥ 2 chopped garlic cloves
♥ 1 tsp smoked paprika
♥ 1 tbsp wheat flour
♥ 1 tsp thyme
♥ 1/2 bunch of parsley
♥ 1 tbsp vegetable oil or margarine
♥ black pepper
♥ salt
  1. Soak the textured soy protein chunks in warm water or warm vegetable broth until they are well hydrated.
  2. Heat a pot with some olive oil or margarine. Add soy chunks, chopped onion, chopped garlic, smoked paprika and wheat flour, mix and stir constantly.
  3. When the onion became transparent cover the soy chunks with vegetable broth or water, add some salt and blacl pepper.
  4. Bring the broth to boil and add chopped potatoes and carrot, thyme and chopped parsley. Cook over medium heat until the vegetables became tender.
  5. Serve the soup with bread dumplings inside.
