Hamburguesas de judías rojas y batata // Red Bean and Sweet Potato Burgers

 1 batata naranja grande
 1 1/2 tazas de judías rojas cocidas
 1 zanahoria
 1 cebolla
 3 cdas de pan rallado
 2 dientes de ajo
 una pizca de sal
 una pizca de pimienta
 2 cdas de aceite
  1. Cocinamos la batata en agua hirviendo hasta que quede blanda. Pelamos la batata y la machacamos con un tenedor.
  2. Picamos la cebolla y el ajo, rallamos la zanahoria. Calentamos un poco de aceite en una sartén y sofreímos la cebolla, el ajo y la zanahoria hasta que la verdura quede blanda. Añadimos el puré de batata al sofrito y cocina 1 minuto más removiendo de vez en cuando.
  3. Añadimos las judías cocidas a la sartén, salpimentamos y cocinamos otros 2 minutos. Aplastamos un poco las judías con un tenedor, no pasa nada si quedan algunas enteras.
  4. Pasamos la masa a un bol, amasamos un poco para que se incorporen bien todos los ingredientes. Añadimos el pan rallado si vemos que la masa no se pega bien. Normalmente con la textura de la batata es suficiente que las hamburguesas se peguen.
  5. Esperamos que la masa se enfríe para poder manejarla con las manos. Cogemos porciones y formamos las hamburguesas.
  6. Cocinamos las hamburguesas a la plancha o en la sartén por ambos lados hasta que se doren o las horneamos 20 minutos a 180ºC.

♥ 1 carrot
♥ 1 onion
♥ 3 tbsp of breadcrumbs or panko
♥ 2 garlic cloves
♥ a pinch of salt
♥ a pinch of pepper
♥ 2 tbsp of oil
  1. Boil the sweet potato in water until it's soft. Peel it and smash it with a fork.
  2. Chop the onion and garlic, grate the carrot. Heat a little oil in a pan and fry the onion, garlic and carrot until the vegetables are soft. Add the sweet potato puree and cook for 1 minute more stirring occasionally.
  3. Add the cooked red beans, salt and pepper to the pan, and cook for another 2 minutes. Smash the beans with a fork, leave some of them intact.
  4. Place the burger dough into a bowl, and mix well. Add the bread crumbs if you see that the dough doesn't stick well (normally with the texture of the sweet potato is enough).
  5. Wait for the dough to cool down a little bit. Take portions of the dough and make burgers with your hands.
  6. Cook the burgers on the grill on both sides until golden brown or bake them for 20 minutes at 180ºC.
